Red Velvet Cupcakes

- 1 & 1/2 cups all purpose flour
- 1 tbsp cocoa powder
- 1 tsp baking powder
- 1 cup white sugar
- 1/2 cup buttermilk
- 1/3 cup canola or flavourless oil
- 1 tsp vanilla essence
- 2 eggs
- red food colouring (about 2 tsp)
- 4 tbsp butter

1. Sift flour, cocoa powder and baking powder into a large mixing bowl
2. In a separate bowl, beat butter and sugar together
3. Add the eggs to the butter and sugar, and beat together
4. Add the buttermilk, oil, vanilla and red food colouring. Add extra food colouring if you need to!
5. Add the wet ingredient mixture to the flour and mix together
6. Bake in the oven for 20 minutes at 180 degrees, or until a skewer comes out clean in the middle
7. Leave to cool before icing! 

Cream Cheese Icing:

- 3 cups icing sugar
- 1 block cream cheese
- 1 tsp vanilla essence
- 1/2 cup butter

1. Beat butter and vanilla together
2. Add the cream cheese and beat until smooth, then add the icing sugar and beat until combined
3. Ice the cupcakes and enjoy!
