A Fabulous Summer Salad!

This salad is such a winner. It's healthy, delicious and so easy to make. Wow your guests with this delight or make in bulk for a fabulous lunch option for the week! 


1/2 cup lentils
1 cup wild rice or quinoa
1/2 cup pistachios
1 red onion, diced
1/2 cup chopped parsley leaves
1/4 cup chopped mint leaves
1/4 cup dried cranberries
1/4 cup lemon juice
1/4 cup olive oil
1 cup pomegranate seeds

Cook lentils and rice/quinoa in separate pots according to packet instructions. In a large bowl, add pistachios, onion, parsley, mint, cranberries and pomegranate and mix to combine. Add the rice/quinoa and lentils and give the bowl another mix. Squeeze the lemon juice and pour the olive oil over the salad. Garnish with extra mint leaves and serve!
